Creamed Spinach, Feta & Mushroom Muffins

You will need:

  • Jumbo Muffin Tray
  • Medium size Mixing Bowl
  • Sauté Pan
  • Sauté Spoon
  • Jug
  • Whisk
  • Muffin Cups

Ingredients:

  • 2 ½ Cups Cake Flour
  • 3 Teaspoon Baking Powder
  • Pinch of Salt
  • Pinch of Black Pepper
  • 2 Eggs
  • 1 Cup Milk
  • ½ Cup Cooking Oil
  • ½ Bunch Spinach – chopped
  • 1 Medium Onion – sliced
  • 100g Feta Cheese – cubed
  • 1 Clove Garlic – crushed
  • 1 Cup Mushrooms – sliced
  • 2 Tablespoon Grated Parmesan
  • ½ Cup Cream

Method:

In a sauté pan, throw in the onion, garlic, mushroom and cook until golden brown. Season to taste.

Add in the spinach and cook until just wilted. Pour in the cream and let it simmer until the cream reduces a little bit. Leave aside and allow to cool completely.

In a medium size bowl, add the flour, baking powder, parmesan and seasoning. Mix together until well combined. Leave aside

In a jug, mix the eggs, milk and oil together. Whisk until well combined.

Once the spinach mix is cooled completely, add it into the flour mix. Throw 60g of feta cheese in as well. Mix until spinach mix is well spread out.

Mix the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Divide mixture into jumbo muffin cups. Sprinkle the remainder of the feta cheese on top of each muffin.

Bake on 170 degrees for approximately 45 minutes.
