We use fluffy egg whites to lighten the biscotti, then fold them gently into stone-ground flour with freshly grated lemon zest, lavender tips and broken almonds. A bit of glace cherry to sweeten and colour it all up. Thinly sliced, crispy and perfect for dipping.
